Make-Ahead Bacon, Egg & Cheddar Muffins

Included groceries: English muffins, bacon, eggs, cheddar and your choice of butter.

Salt and black pepper.

  1. Heat the oven to 375°F. Cook the bacon until crisp, then drain and cut it into five portions.
  2. Whisk five eggs with salt and pepper. Pour into five greased muffin cups or a small greased baking dish and bake until the whites and yolks are firm, about 10 to 12 minutes.
  3. Split and lightly butter the English muffins. Layer each with egg, bacon and cheddar.
  4. Eat immediately, or cool the sandwiches before wrapping them individually for the week.
  5. Refrigerate for 3 to 4 days or freeze. Reheat refrigerated or thawed sandwiches until the center reaches 165°F.
