Al Bekkum started Nordic Creamery after spending years watching industrial dairy flatten the flavor out of everything. His creamery in Westby, Wisconsin produces small-batch cultured butters and artisan cheeses from local grass-fed milk. He doesn’t scale. He doesn’t rush. He makes things the way they were made before the grocery store decided convenience mattered more than taste. You’ll lose twenty minutes of your life talking to him about butter cultures. You’ll leave with three pounds of butter and no regrets.
