Easy Difficulty

Make four or five freezer-friendly pasture-raised egg sandwiches with sourdough bagels or English muffins, then add bacon, cheese or butter to suit your week.

Serves: 5  ·  Total time: 35 min

Package note: English muffins make approximately five sandwiches; bagels make approximately four.

From Iron & Acre

  • 5 FlaRa Sourdough English Muffins or 4 FlaRa Sourdough Bagels
  • 5 or 4 Organic Pasture-Raised Eggs
  • Pasture-Raised Bacon, cooked and portioned (optional)
  • Grass-Fed Cheddar, Muenster or Mozzarella (optional)
  • Cultured Butter or Everyday Butter (optional)

From your pantry

  • Kosher salt
  • Black pepper
  • Neutral oil if butter is not selected

Method

  1. Heat the oven to 375°F. If selected, cook the bacon until crisp, drain and portion for the selected bread.
  2. Cook one egg per sandwich until the yolks and whites are firm, or whisk and bake the eggs in a greased dish until they reach 160°F, then cut into portions.
  3. Split and lightly toast the selected English muffins or bagels. Use selected butter or a little neutral oil as needed.
  4. Layer each sandwich with egg and any selected bacon or cheese.
  5. Serve immediately, or cool completely before wrapping each sandwich for refrigeration or freezing.
  6. Reheat refrigerated or thawed sandwiches until the center reaches 165°F.

Storage and reheating

Cool before wrapping. Refrigerate up to 3 to 4 days or freeze for longer storage. Reheat refrigerated or thawed sandwiches to 165°F.

Food-safety note: Cook shell eggs until the yolks and whites are firm, or cook egg dishes to 160°F. Reheat stored sandwiches to 165°F.
