Black Raspberries

Good Soil Farmers' black raspberries — deeper than red, earthy and sweet, and best eaten the day they arrive.

Black raspberries are one of the most fleeting fruits of early summer — a short window, a specific place, and a flavor that red raspberries can't replicate. Good Soil Farmers harvests them at peak ripeness: deep purple-black, earthy, and intensely sweet with a subtle tartness. Eat them straight from the container, spoon over yogurt or ricotta, fold into a quick pan sauce for duck or pork, or freeze what you can't finish within the first two days.

Do not wash until ready to eat — moisture accelerates mold. Spread in a single layer on a paper-towel-lined plate and refrigerate uncovered. Eat within 2–3 days. Freeze any extras on a sheet pan, then transfer to a bag — they hold beautifully for months.

Remove leaves if attached and store separately — they wilt faster than the bulb. Wrap the bulb loosely in a damp paper towel and refrigerate in the crisper. Peel just before using. Eat raw in slaws, roasted, or shaved thin into salads.

Trim the woody ends and stand upright in a jar with an inch of cold water, like flowers. Cover loosely with a bag and refrigerate. Change the water daily. Best eaten within 2–3 days for peak sweetness.

Breakfast Radishes 5–7 days · Fridge

Separate the greens from the roots — the greens pull moisture from the radishes. Store roots in a zip bag in the crisper. Greens can be sautéed like spinach. Radishes are best cold and crisp — slice onto butter toast with flaky salt.

Ramps 3–5 days · Fridge

Use quickly — ramps are fleeting. Wrap loosely in a damp paper towel and store in the crisper. Don't wash until ready to use. The bulbs are more pungent; the leaves are milder. Grill, pickle, or blend into pesto. Freeze the leaves in oil for later.

Chioggia Beets 2–3 weeks · Fridge

Trim greens to 1 inch above the root — don't cut into the beet or they'll bleed. Store unwashed in a bag in the crisper. The candy-stripe pattern fades with heat, so serve raw or lightly roasted to preserve the look. Pairs beautifully with citrus and goat cheese.

Red Rhubarb 1–2 weeks · Fridge

Remove any leaves immediately — they are toxic. Store stalks unwashed in a loose bag in the crisper. Freezes beautifully: chop into 1-inch pieces and freeze flat on a sheet pan, then bag. Always cook with sugar to balance the tartness.

Fennel 5–7 days · Fridge

Cut the fronds from the bulb — they dry out quickly but the bulb keeps well. Wrap the bulb in a damp paper towel and refrigerate. The fronds make a great garnish. Shave the bulb raw into salads, or roast until caramelized and sweet.

Chinese Cabbage 1–2 weeks · Fridge

Keep whole and unwashed in a loose plastic bag in the crisper — it lasts longest intact. Once cut, wrap tightly in plastic and use within 3–4 days. Great raw in slaws, quick-pickled, stir-fried, or braised. Mild flavor absorbs sauces and seasonings well.
