Garlic-Butter Salmon with Wild Rice & Greens

Included groceries: Your choice of Keta or Coho salmon, Brown or White Cahokia rice, Weekly Greens and garlic-basil butter.

Salt, black pepper and optional lemon. For dry rice, use water according to the package directions.

  1. For the under-30-minute version, start with cooked Cahokia rice. From dry, cook 1 part rice with 3 parts water for 45 to 55 minutes, as directed on the product.
  2. Heat the oven to 425°F. Pat the salmon dry, season it, and place it on a lined sheet pan.
  3. Roast until the fish reaches 145°F or is opaque and separates easily with a fork, generally 10 to 14 minutes depending on thickness.
  4. Warm the rice and quickly sauté the greens with garlic-basil butter. Add lemon if you have it.
  5. Serve the salmon over rice with the greens. Refrigerate leftovers within 2 hours, use within 3 to 4 days and reheat to 165°F.
