Cahokia Rice is a high-protein wild rice grown in the American Midwest — a heritage grain with deep roots in the region, named for the ancient Cahokia civilization that cultivated the Mississippi River valley. With 50% more protein than conventional white rice and a naturally nutty, earthy flavor, it cooks up firm and slightly chewy. Use it as a base for grain bowls, alongside braised meats, or as a hearty side that actually holds its own on the plate.

Cooks like: 1 part rice to 3 parts water; simmer covered for 45 to 55 minutes until grains open
