Priority Guide
Not everything keeps equally well. Here's the order that makes the most of your delivery.
Sugars convert to starch within 24–48 hours of picking. Eat it tonight if you can. Don't refrigerate — it accelerates the process. Boil in unsalted water for 4 minutes.
Store unwashed in the crisper drawer. They'll stay crisp for 3–4 days. Blanch and shock in ice water if you want to preserve them longer.
Keep at room temperature, away from direct light. They'll last 1–2 weeks but are best used fresh. Slice thin and caramelize low and slow — 20–25 minutes in butter.
Store in a cool, dark place — not the refrigerator. Cold temperatures convert potato starch to sugar and affect texture. A paper bag in a cabinet works well.
Remove the tops if they're attached — they draw moisture from the root. Store in the crisper in a damp paper towel. These are sweeter than winter carrots.
Store whole in the refrigerator, loosely wrapped. Don't cut it until you're ready to use it. Roasts beautifully at high heat — 425°F until the edges are deeply caramelized.
