🛒 Ingredients
For the tacos
- 1 lb pasture-raised chicken breast, grass-fed beef, or white fish (like cod or tilapia)
- 1 tbsp olive oil
- 1 tsp cumin
- 1 tsp paprika
- Salt + pepper to taste
- Corn or flour tortillas
For the cabbage slaw
- 3 cups shredded green cabbage
- 1/4 cup chopped cilantro
- Juice of 1 lime
- 1 tbsp apple cider vinegar
- 1 tbsp mayo or Greek yogurt
- Salt to taste
Optional toppings
- Pickled red onions
- Avocado slices
- Crumbled cotija or feta cheese
- Hot sauce
🔪 Instructions
Season + Cook the Protein
Rub chicken, beef, or fish with olive oil, cumin, paprika, salt, and pepper.
- Chicken: Grill or pan-sear 4–5 min per side until internal temp hits 165°F.
- Beef: Use ground beef or steak strips, cooked until browned.
- Fish: Cook 2–3 min per side, until just flaking.
- Make the Slaw
- Toss cabbage, cilantro, lime juice, vinegar, mayo (or yogurt), and salt. Let it sit 10 minutes while you prep everything else.
- Warm the Tortillas
- Heat tortillas over an open flame or in a dry skillet until soft and charred at the edges.
- Assemble the Tacos
- Layer tortillas with protein, generous cabbage slaw, and your favorite toppings.
- Serve
