Yukon Gold Potatoes with Garlic Chives

These creamy Yukon Gold potatoes with garlic and chives are a comforting side dish that pairs perfectly with pasture raised meats from Iron & Acre. The buttery, golden potatoes are lightly mashed and tossed with fragrant garlic and fresh chives for an easy and delicious accompaniment.

Ingredients

  • 2 pounds Yukon Gold potatoes, peeled and cut into chunks
  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/4 cup fresh chives, chopped
  • Salt and pepper to taste
  • 1/4 cup sour cream or milk (optional, for extra creaminess)

Instructions

  1. Bring a large pot of salted water to a boil. Add the potatoes and cook until they are fork‑tender, about 15 minutes. Drain well.
  2. In a large skillet over medium heat, melt the butter and olive oil together. Add the minced garlic and sauté until fragrant, about 1 minute.
  3. Add the cooked potatoes to the skillet and gently toss to coat them in the garlic butter. Season with salt and pepper.
  4. Roughly mash the potatoes with a spatula, leaving some pieces for a rustic texture. Stir in the chopped chives and sour cream or milk if using, adjusting the consistency to your liking.
