Ingredients: • 8 large eggs • 1/4 cup whole milk • 1 bunch asparagus, trimmed and cut into 1-inch pieces • 1 cup fresh spinach, chopped • 1/4 cup fresh herbs (parsley, chives, dill), chopped • 1/2 cup crumbled goat cheese • 2 tablespoons olive oil • Salt and pepper to taste
Instructions:
- Preheat oven to 375°F (190°C).
- In a bowl, whisk eggs and milk; season with salt and pepper.
- In an oven-safe skillet, heat olive oil over medium heat. Add asparagus and cook until tender. Add spinach and cook until wilted.
