Spring Herb Frittata with Asparagus and Goat Cheese

Celebrate spring with this herb frittata featuring tender asparagus, fresh spinach, and creamy goat cheese. This light yet satisfying dish is perfect for brunch or dinner and serves a family of four.

Ingredients: • 8 large eggs • 1/4 cup whole milk • 1 bunch asparagus, trimmed and cut into 1-inch pieces • 1 cup fresh spinach, chopped • 1/4 cup fresh herbs (parsley, chives, dill), chopped • 1/2 cup crumbled goat cheese • 2 tablespoons olive oil • Salt and pepper to taste

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, whisk eggs and milk; season with salt and pepper.
  3. In an oven-safe skillet, heat olive oil over medium heat. Add asparagus and cook until tender. Add spinach and cook until wilted.
  4. Pour egg mixture over vegetables. Sprinkle fresh herbs and goat cheese evenly.
  5. Cook on stovetop until edges set, then transfer skillet to oven and bake 10-12 minutes until center is set.
  6. Remove from oven, let cool slightly, slice into wedges and serve warm.
