Roasted Brussels Sprouts with Honey and Garlic

Brussels sprouts get a bad rap, but when roasted until crispy and drizzled with honey and garlic, they become a mouthwatering side dish. This recipe uses pasture-raised ingredients from Iron & Acre to create a comforting and nutritious dish perfect for any meal.

Ingredients:

  • 1 lb Brussels sprouts, trimmed and halved
  • 2 tbsp olive oil or melted butter
  • 2 cloves garlic, minced
  • 2 tbsp honey
  • Salt and freshly ground black pepper, to taste
  • Optional: a squeeze of lemon juice or a handful of cooked bacon bits for extra flavor

Instructions:

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, toss the halved Brussels sprouts with olive oil, minced garlic, salt and pepper until evenly coated. Spread them in a single layer on the prepared baking sheet.
  3. Roast for 20‑25 minutes, stirring halfway through, until the sprouts are tender inside and have crispy, browned edges.
  4. Remove the pan from the oven and drizzle the hot Brussels sprouts with honey. Toss gently to coat. If you like, finish with a squeeze of lemon juice or sprinkle with bacon bits.
