Orange Bell Pepper Sauce

This vibrant orange bell pepper sauce is a flavorful and versatile condiment that brings a burst of sweet pepper flavor to any dish. Its beautiful color and tangy-sweet taste make it perfect for drizzling over pasta, grilled meats, or roasted vegetables.

Ingredients:

  • 4 large orange bell peppers, seeded and chopped
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon white wine vinegar or lemon juice
  • 1/2 teaspoon salt, plus more to taste
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 cup vegetable or chicken broth
  • Optional: pinch of red pepper flakes for heat

Instructions:

  1. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the chopped orange bell peppers and cook until they begin to soften, about 6‑8 minutes.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Pour in the vinegar, add the salt and black pepper, and pour in the broth. Bring the mixture to a simmer and let it cook until the peppers are very tender, about 10 minutes.
  5. Remove the skillet from heat and let the mixture cool slightly. Transfer the contents to a blender and blend until smooth and creamy.
  6. Taste the sauce and adjust seasoning if needed. Add a pinch of red pepper flakes if you prefer a bit of heat.
  7. Allow the sauce to cool completely before transferring it to an airtight container. Refrigerate for up to one week. Serve with your favorite dishes and enjoy!
