Ingredients
- 1 lb Carola potatoes, peeled and cut into 1‑inch cubes
- 3 medium carrots, peeled and cut into 1‑inch pieces
- 2 large parsnips, peeled and cut into 1‑inch pieces
- 2 tbsp olive oil
- 2 tbsp unsalted butter, melted
- 2 tbsp pure maple syrup or local honey
- 1 tbsp apple cider vinegar
- 1 tbsp fresh thyme leaves (or 1 tsp dried)
- 1 tsp fresh rosemary, minced
- Kosher salt and freshly ground black pepper, to taste
- Flaky sea salt and chopped parsley for garnish
Instructions
- Preheat your oven to 400°F (204°C) and line a large baking sheet with parchment paper.
- In a large bowl, combine the diced Carola potatoes, carrots and parsnips. Drizzle with olive oil, melted butter, maple syrup and apple cider vinegar. Add the thyme and rosemary, then season generously with salt and pepper. Toss until the vegetables are evenly coated.
- Spread the vegetables in an even layer on the prepared baking sheet. Roast for 25‑30 minutes, stirring once or twice, until the vegetables are tender and caramelized around the edges.
