🍋 Lemon-Herb Chicken Thighs

This recipe features our pasture-raised chicken thighs — the same juicy cuts found in most Iron & Acre plans — roasted to golden perfection in under 30 minutes.
🛒 Ingredients:
- 🍗 1.5 lbs pasture-raised chicken thighs (bone-in, skin-on)
- 🧄 2 cloves garlic, minced
- 🍋 Zest of 1 lemon + juice of ½
- 🌿 1 tbsp fresh rosemary (or 1 tsp dried)
- 🧂 1 tsp salt
- 🧈 2 tbsp olive oil
- 🌶️ ½ tsp cracked black pepper
🔥 Instructions:
- Preheat oven to 425°F
- Pat chicken dry with paper towels for crispier skin
- In a small bowl, combine:
olive oil, garlic, lemon zest + juice, rosemary, salt, pepper - Rub marinade all over chicken thighs
- Let rest for 10–15 minutes (or overnight for max flavor)
- Place thighs skin-side up on a sheet pan or cast iron skillet
- Roast 25–30 min until golden and internal temp hits 165°F
- Rest 5 min. Serve with veggies, rice, or whatever’s in your I&A box!
