🍋 Lemon-Herb Chicken Thighs

The farm-fresh dinner your weeknight routine has been missing

Looking for a quick dinner that feels fresh, flavorful, and pulled straight from the farm?

This recipe features our pasture-raised chicken thighs — the same juicy cuts found in most Iron & Acre plans — roasted to golden perfection in under 30 minutes.


🛒 Ingredients:

  • 🍗 1.5 lbs pasture-raised chicken thighs (bone-in, skin-on)
  • 🧄 2 cloves garlic, minced
  • 🍋 Zest of 1 lemon + juice of ½
  • 🌿 1 tbsp fresh rosemary (or 1 tsp dried)
  • 🧂 1 tsp salt
  • 🧈 2 tbsp olive oil
  • 🌶️ ½ tsp cracked black pepper

🔥 Instructions:

  1. Preheat oven to 425°F
  2. Pat chicken dry with paper towels for crispier skin
  3. In a small bowl, combine:
    olive oil, garlic, lemon zest + juice, rosemary, salt, pepper
  4. Rub marinade all over chicken thighs
  5. Let rest for 10–15 minutes (or overnight for max flavor)
  6. Place thighs skin-side up on a sheet pan or cast iron skillet
  7. Roast 25–30 min until golden and internal temp hits 165°F
  8. Rest 5 min. Serve with veggies, rice, or whatever’s in your I&A box!
