🥩 Garlic-Rosemary Beef Patties with Roasted Veg

A quick stovetop meal that turns simple ingredients into a farm-to-table dinner


A good ground beef recipe shouldn’t feel like a backup plan. With a little seasoning and smart sides, these juicy patties become the star of your plate — no grill required.


🍳 Serves 4 | Prep: 10 min | Cook: 20 min


🛒 Ingredients

For the Patties:

  • 1 lb pasture-raised ground beef
  • 2 cloves garlic, minced
  • 1 tbsp fresh rosemary, finely chopped (or 1 tsp dried)
  • 1 tsp Dijon mustard
  • ½ tsp salt
  • ½ tsp black pepper

For the Roasted Veg:

  • 2–3 carrots, peeled and sliced
  • 1 zucchini, chopped
  • ½ red onion, sliced
  • 2 tbsp olive oil
  • Salt & pepper

🔪 Instructions

👉 Roasted Veg:

  1. Preheat oven to 425°F.
  2. Toss veggies in olive oil, salt, and pepper.
  3. Spread on a baking sheet and roast for 20–25 minutes, turning once.

👉 Beef Patties:

  1. In a bowl, combine ground beef, garlic, rosemary, mustard, salt, and pepper.
  2. Form into 4 evenly sized patties.
  3. Heat a skillet over medium heat with a little oil or butter.
  4. Sear patties for ~4 minutes per side, until browned and cooked to desired doneness (internal temp 160°F).
  5. Let rest 2–3 minutes before serving.

Serve these patties over roasted vegetables, mashed potatoes, or a bed of mixed greens. Add a fried egg on top for a next-level “farm burger” bowl.
