This is our go-to burger night move: simple technique, next-level flavor, and all the flexibility to please even picky eaters. No grill requiredβjust a hot pan and a little confidence.

π Ingredients
For the Burgers:
- 1.25 lbs pasture-raised ground beef (80/20 is best)
- Salt & pepper
- 4 slices American or sharp cheddar cheese
- 4 burger buns (we like brioche or potato rolls)
- Butter or mayo, for toasting buns
Optional Toppings:
- Thinly sliced red onion
- Pickles
- Lettuce
- Tomato
- Special sauce or classic ketchup/mustard
πͺ Instructions
π Form Loose Balls:
Divide ground beef into 4 equal portions (5 oz each). Roll loosely into ballsβdonβt overwork them.
π Toast the Buns:
Butter or mayo the insides and toast in a hot skillet until golden. Set aside.
π Smash & Sear:
Heat a cast-iron skillet or griddle over medium-high until very hot.
Place 1β2 beef balls in the pan and immediately smash flat with a spatula (use parchment between the meat and spatula to prevent sticking).
Season with salt and pepper. Cook 2β3 minutes without moving.
π Flip & Finish:
Flip when the bottom has a deep crust. Add cheese and cook another 1β2 minutes until just melted and juicy.

Stack patties on toasted buns with your favorite toppings. Serve hot.
