They say this dish got its name because itโs that goodโlike, "put a ring on it" good. And while the restaurant version can be heavy and fussy, weโve pared it back to just the essentials: tender pasture-raised chicken, a silky sun-dried tomato cream sauce, and a hit of fresh herbs.
This is rustic elegance at its best. Pair it with roasted potatoes, buttered noodles, or seasonal veg, and youโve got yourself a meal that feels fancyโwithout any of the fuss.

๐ Ingredients
For the Chicken:
- 2 large pasture-raised chicken breasts (sliced in half horizontally)
- Salt & pepper
- 1 tbsp olive oil
- 1 tbsp butter
For the Sauce:
- 2โ3 cloves garlic, minced
- ยฝ cup sun-dried tomatoes in oil, drained & chopped
- 1 tsp dried thyme (or 1 tbsp fresh)
- ยฝ cup chicken broth
- ยพ cup heavy cream
- โ cup grated Parmesan
- Optional: pinch of red pepper flakes
To Finish:
- Chopped fresh basil or parsley
- Extra Parmesan for serving
๐ช Instructions
๐ Cook the Chicken:
Season sliced chicken breasts with salt and pepper.
Heat olive oil and butter in a large skillet over medium heat.
Sear chicken 3โ4 minutes per side until golden and cooked through. Remove and set aside.
๐ Make the Sauce:
In the same pan, sautรฉ garlic and sun-dried tomatoes for 1 minute.
Add thyme and deglaze with chicken broth. Simmer 2โ3 minutes.
Lower heat, stir in cream and Parmesan. Simmer gently until slightly thickened (3โ5 min).
Return chicken to the pan and spoon sauce over the top. Simmer 2 more minutes.
๐ Garnish & Serve:
Top with chopped herbs and more Parmesan. Serve hot with your favorite sides.
