They say this dish got its name because itโ€™s that goodโ€”like, "put a ring on it" good. And while the restaurant version can be heavy and fussy, weโ€™ve pared it back to just the essentials: tender pasture-raised chicken, a silky sun-dried tomato cream sauce, and a hit of fresh herbs.

This is rustic elegance at its best. Pair it with roasted potatoes, buttered noodles, or seasonal veg, and youโ€™ve got yourself a meal that feels fancyโ€”without any of the fuss.

๐Ÿ›’ Ingredients

For the Chicken:

  • 2 large pasture-raised chicken breasts (sliced in half horizontally)
  • Salt & pepper
  • 1 tbsp olive oil
  • 1 tbsp butter

For the Sauce:

  • 2โ€“3 cloves garlic, minced
  • ยฝ cup sun-dried tomatoes in oil, drained & chopped
  • 1 tsp dried thyme (or 1 tbsp fresh)
  • ยฝ cup chicken broth
  • ยพ cup heavy cream
  • โ…“ cup grated Parmesan
  • Optional: pinch of red pepper flakes

To Finish:

  • Chopped fresh basil or parsley
  • Extra Parmesan for serving

๐Ÿ‘‰ Cook the Chicken:
Season sliced chicken breasts with salt and pepper.
Heat olive oil and butter in a large skillet over medium heat.
Sear chicken 3โ€“4 minutes per side until golden and cooked through. Remove and set aside.

๐Ÿ‘‰ Make the Sauce:
In the same pan, sautรฉ garlic and sun-dried tomatoes for 1 minute.
Add thyme and deglaze with chicken broth. Simmer 2โ€“3 minutes.
Lower heat, stir in cream and Parmesan. Simmer gently until slightly thickened (3โ€“5 min).
Return chicken to the pan and spoon sauce over the top. Simmer 2 more minutes.
