🥩 How to Sear a Perfect Steak Every Time

📋 Prep Steps:

  • 🕒 Let steak sit out for 20–30 minutes to come to room temp.
  • 🧻 Pat dry with paper towels — moisture prevents a good crust.
  • 🧂 Season generously right before cooking with kosher salt & cracked pepper.

🔥 The Sear:

  1. Use a cast iron or stainless pan — heat until shimmering.
  2. Add a neutral, high-temp oil (like avocado or grapeseed).
  3. Place steak in the pan. Don’t touch it. Let it sear 2–3 minutes.
  4. Flip once. Add butter, garlic, and thyme for a finishing baste.

🌡 Internal Temp Guide:

  • Rare: 120–125°F
  • Medium Rare: 130–135°F
  • Medium: 140°F
Let rest 5–10 minutes before slicing.
